ABSTRACT


Tofu is a food that has high consumption in Indonesia but it is perishable. Thus, a tofu standard product is important to ensure the quality of the tofu. Badan Standarisasi National (National Standardization Agency) published a tofu standard product regulation in SNI 01-3142-1998 document. This paper is aimed at identifying Small Medium Enterprise (SME)’s technological readiness to fulfill the tofu product standard by modified Quality Function Deployment (QFD) methodology. There are nine SME's that have been surveyed. Twelve standard requirement and nine production processes are identified. Overall, the technology of SME does not conform to the standard. Thus, an improvement is needed to be made, especially in soybean washing and slurry cooking proses to ensure the food safety correlated standard is fulfilled.
